Hard to believe it's 4th of July already! Time flies when you're having fun. Only 5 weekends left to practice. I had three good rides this weekend, focusing on climbing, with the bike fully loaded down to simulate the conditions of the journey. I even handwashed my biking clothes after the rides and hung them up to dry to make sure the fabrics can dry overnight. The weight of my bike without the bags is 33 lbs. The weight of the loaded bags, at this point, is also 33 lbs. Of this, Camping Gear accounts for 7.5 lbs. Water is not included in these figures, and would add from 3 to 10 lbs, depending on how far from civilization we're going each day.
Bags include a triangular Frame Bag, Handlebar Bag, Seat Bag, 2 Panniers, and the Tent Bag tied to the top of the rack. It all feels tight and well balanced. Tested some downhill curves at decent speed and the bike felt very stable. This is, after all, why we went with the Surly frame.
Contents of the Frame Bag include rubber gloves, chain lube, chain cleaning cloth, folding bike stand, and tire pressure gauge. 
Contents of the Seat Bag include spare tube, patching supplies, tire removal levers, temporary spoke replacement system, and a whiz bang multitool.
Front Handlebar Bag includes a map holder top, rain cover, dog-size pepper spray, combination cable lock, first aid kit, chewing gum, seat cover, sweat cap; and a money clip securing cash, credit cards, drivers license, health insurance card, and emergency contact info. Also, not shown are small camera and two smartphones ( Verizon & AT&T ). With all that, there's still room for snacks and a foot-long sandwich.
The Tent is a Eureka Solitaire with some lighter/stronger replacement stakes. The stretchy mesh cargo holder will be used to secure it to the rack and also allow for some wet clothes or towel to be attached for 'drying while riding' purposes.
This Pannier has a small Acer laptop, charger, wireless mouse, and tethering cord to access the Verizon smartphone data plan. Clothing in 3 ziplock bags includes sleepwear, casual outfit, and a spare biking outfit. The inflatable sleeping pad straps to the top of the pannier, and the rear pouch will hold my headlamp, spare batteries, matches, and a 1 liter water bottle. Also incuded are toiletries and a month's supply of prescription meds.
The other Pannier will carry the spare bottom bracket, tools for replacing it, chain whip/pedal wrench, Brooks seat leather dressing and adjustment tool, spare tire, 2nd spare tube, compact but warm sleeping bag, sunscreen, sunburn ointment, seat-skin ointment, bug repellant. The top pouch holds my raincoat and pannier covers. The rear pouch will hold another 1 liter water bottle, a small bottle of concentrated laundry detergent and a stretchy clothesline.

The front rack is available to carry an additional large water bottle, when needed.
